Freakin Rican Sofrito

Ingredients

  • 1-2 Bunches of Cilantro
  • 1 Bunch of Culantro
  • 2 Red Peppers
  • 1 Green Pepper
  • 1 Onion
  • 3 Heads of garlic
  • 2 cups Ajicito
  • ¼ cup Olive or Canola Oil

Directions

  • Wash all your vegetables thoroughly.
  • Cut the ends to the Cilantro as well as the Culantro, about a half inch off.
  • Take seeds out of the peppers as well as your ajicitos. Peel your garlic. Now start to chop up everything with your knife into about 1 inch pieces.
  • Now time to use your blender or food processor, whichever you prefer. Add the oil and start adding your ingredients in.
  • Blend till creamy but you can leave little chunks. Jar and freeze or simply keep in your refrigerator.

And, Weepa, you’re done. Buen Provecho!

I just came across your youtube recipe and had to learn more so I came to your restaurant page. You are so inspiring! I’m going to gather a bunch of the girls and come visit the restaurant because I’m sure we’d love the energy. Can’t wait to try the fried baseballs and footballs filled with meat (as my daughter refers to them) – and mostly, NY Times’ best pastelles!

I’ve been checking your web site with all the Spanish food you’ve been making. I’ll am going to try and cook all of the Spanish food one at a time. When I see the finish product all the food looks so good. If I can cook as good as you. I know a can accomplish all the dishes for my Brazilian family.
